Ingredients
- 4 large eggs
- 100g smoked salmon
- 4 slices wholemeal bread
- 30g butter
- 2 tbsp fresh dill
- 1 lemon
- to taste sea salt and black pepper
Instructions

1Toast the wholemeal bread slices until golden and crispy.

2Butter the warm toast generously and set aside on serving plates.

3Crack eggs into a bowl and whisk gently with a fork.

4Melt butter in a non-stick pan over medium-low heat.

5Pour eggs into the pan and stir slowly and continuously for 3-4 minutes until soft and creamy.

6Season eggs with salt and pepper to taste.

7Arrange smoked salmon on top of the buttered toast.

8Spoon scrambled eggs over the salmon.

9Garnish with fresh dill and a squeeze of lemon juice.

10Serve immediately while warm.
