Smoked Salmon and Scrambled Eggs on Toast

Ingredients

  • 4 large eggs
  • 100g smoked salmon
  • 4 slices wholemeal bread
  • 30g butter
  • 2 tbsp fresh dill
  • 1 lemon
  • to taste sea salt and black pepper

Instructions

    Toast the wholemeal bread slices until golden and crispy.

    Butter the warm toast generously and set aside on serving plates.

    Crack eggs into a bowl and whisk gently with a fork.
  4. 4
    Melt butter in a non-stick pan over medium-low heat.

    Pour eggs into the pan and stir slowly and continuously for 3-4 minutes until soft and creamy.

    Season eggs with salt and pepper to taste.

    Arrange smoked salmon on top of the buttered toast.

    Spoon scrambled eggs over the salmon.
  9. 9
    Garnish with fresh dill and a squeeze of lemon juice.

    Serve immediately while warm.
