Ingredients
- 2 cups shredded green papaya
- 2 Thai bird's eye chilies
- 3 cloves garlic
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 teaspoon palm sugar
- ¼ cup long beans, cut into 2-inch pieces
- ¼ cup cherry tomatoes, halved
- 3 tablespoons roasted unsalted peanuts
- 2 tablespoons fresh cilantro
- 1 tablespoon dried shrimp (optional)
Instructions

1In a large mortar, gently pound the garlic and Thai chilies together until slightly bruised but not fully crushed.

2Add the palm sugar and pound gently to combine.

3Add the long beans and cherry tomatoes, and lightly bruise them with the pestle.

4Add the shredded green papaya and toss everything together gently for about 1 minute, bruising the papaya slightly.

5Add the lime juice and fish sauce, and toss well to combine.

6Transfer to a serving plate and top with roasted peanuts, cilantro, and dried shrimp if desired.

7Serve immediately while fresh and crisp.
