Som Tam (Green Papaya Salad)

Ingredients

  • 2 cups shredded green papaya
  • 2 Thai bird's eye chilies
  • 3 cloves garlic
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon palm sugar
  • ¼ cup long beans, cut into 2-inch pieces
  • ¼ cup cherry tomatoes, halved
  • 3 tablespoons roasted unsalted peanuts
  • 2 tablespoons fresh cilantro
  • 1 tablespoon dried shrimp (optional)

Instructions

    In a large mortar, gently pound the garlic and Thai chilies together until slightly bruised but not fully crushed.

    Add the palm sugar and pound gently to combine.

    Add the long beans and cherry tomatoes, and lightly bruise them with the pestle.

    Add the shredded green papaya and toss everything together gently for about 1 minute, bruising the papaya slightly.

    Add the lime juice and fish sauce, and toss well to combine.

    Transfer to a serving plate and top with roasted peanuts, cilantro, and dried shrimp if desired.
