Ingredients

  • 1 medium green papaya, shredded
  • 2 cloves garlic
  • 2 fresh Thai red chilies
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar
  • 1/4 cup long beans, cut into 2-inch pieces
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons crushed roasted peanuts
  • 1 lime, cut into wedges

Instructions

    In a large mortar and pestle, gently pound the garlic and chilies together until fragrant, being careful not to crush them completely.

    Add the long beans and cherry tomatoes, lightly bruising them to release their juices.

    Add the shredded green papaya and gently toss everything together.

    Add the lime juice, fish sauce, and palm sugar, then mix thoroughly with a gentle pounding and tossing motion until well combined.

    Transfer to a serving plate and top with crushed roasted peanuts.

    Serve immediately with lime wedges on the side.
