Ingredients
- 2 cups shredded unripe green papaya
- 2 cloves garlic, minced
- 2-3 Thai bird eye chilies
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp palm sugar
- 1/4 cup long beans, cut into 2-inch pieces
- 1/4 cup cherry tomatoes, halved
- 3 tbsp roasted peanuts, crushed
- 1 lime wedge for serving
Instructions

1In a large mortar, pound the garlic and Thai chilies together until fragrant and slightly broken down

2Add the long beans and tomatoes to the mortar, gently bruising them to release their flavors

3Add the shredded green papaya to the mortar and toss gently, mixing without over-crushing

4Pour in the lime juice, fish sauce, and palm sugar, then toss everything together until well combined

5Transfer to a serving plate and top with crushed roasted peanuts
