Spanish Spinach Salad with Serrano Ham

Ingredients

  • 200 g fresh baby spinach
  • 80 g Serrano ham, thinly sliced
  • 50 g pine nuts
  • 1 small red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

Instructions

    Toast the pine nuts in a dry pan over medium heat for 2-3 minutes until fragrant, then set aside.

    Whisk together olive oil, sherry vinegar, Dijon mustard, salt, and pepper to create the dressing.

    Arrange fresh spinach in a large bowl and add sliced red onion.

    Pour dressing over spinach and toss gently to combine.
