Ingredients
- 2 cups self-raising flour
- 1/2 tsp salt
- 4 tbsp cold butter, cubed
- 2 tbsp caster sugar
- 1 egg
- 1/4 cup milk
- 150g fresh strawberries, chopped
- 1 tsp vanilla extract
- to serve clotted cream
- to serve strawberry jam
Instructions

1Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.

2Sift flour and salt into a large bowl. Rub in the cold butter with your fingertips until the mixture resembles breadcrumbs.

3Stir in caster sugar. In a separate bowl, whisk together the egg, milk, and vanilla extract.

4Make a well in the centre of the dry ingredients and pour in the wet mixture. Fold gently with a knife until a soft dough forms.

5Lightly fold in the chopped strawberries, being careful not to overwork the dough.

6Turn dough out onto a floured surface and gently flatten to about 2cm thickness. Cut into 8 rounds using a 6cm cutter.

7Place scones on the prepared baking tray. Bake for 12-15 minutes until golden brown and risen.

8Cool slightly on a wire rack. Serve warm with clotted cream and strawberry jam.
