Ingredients
- 2 cups self-raising flour
- 4 tablespoons butter, cold and cubed
- 2 tablespoons caster sugar
- 1 teaspoon baking powder
- 1 pinch salt
- 1 egg, beaten
- 1/2 cup milk
- 1 cup heavy cream, whipped
- 250g fresh strawberries, sliced
- 2 tablespoons icing sugar
Instructions

1Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.

2Sift flour, baking powder, and salt into a large bowl. Rub in cold butter with fingertips until mixture resembles breadcrumbs.

3Stir in caster sugar. Make a well in the centre and add beaten egg and milk, mixing gently until a soft dough forms.

4Turn dough onto a floured surface and gently knead. Roll out to 2cm thickness and cut into rounds using a scone cutter.

5Place scones on prepared tray and bake for 12-15 minutes until golden and risen.

6Cool scones slightly, then split in half. Top each scone with whipped cream, fresh strawberries, and a dusting of icing sugar.

7Serve warm with tea or coffee.
