Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups whole milk
  • 2 tablespoons melted butter
  • 1 pound fresh strawberries, sliced
  • 2 tablespoons sugar for berries
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

    In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.

    In another bowl, beat eggs and mix with milk and melted butter.

    Pour wet ingredients into dry ingredients and stir until just combined; batter should be slightly lumpy.

    Heat a buttered griddle or non-stick skillet over medium-high heat.

    Pour 1/4 cup batter per pancake and cook until bubbles form on top, about 2 minutes, then flip and cook another 1-2 minutes until golden.

    Toss sliced strawberries with 2 tablespoons sugar and let sit for 5 minutes to release juices.
