Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups buttermilk
  • 4 tablespoons melted butter
  • 1 pound fresh strawberries, hulled and halved
  • 2 tablespoons powdered sugar
  • 1 cup heavy whipping cream
  • 2 tablespoons granulated sugar

Instructions

    Mix flour, 2 tablespoons sugar, baking powder, and salt in a large bowl.

    In another bowl, whisk eggs, buttermilk, and melted butter together.

    Combine wet and dry ingredients until just blended; batter should be slightly lumpy.

    Heat a griddle or skillet over medium heat and lightly grease it.

    Pour 1/4 cup batter for each pancake and cook until bubbles form on top, about 2 minutes.

    Flip and cook until golden brown, about 1-2 minutes more.
