Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 3/4 cups whole milk
  • 2 tablespoons melted butter
  • 1 pound fresh strawberries, sliced
  • 1 tablespoon sugar for berries
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

    Combine flour, sugar, baking powder, and salt in a large bowl.

    Whisk eggs, milk, and melted butter together in another bowl.

    Pour wet ingredients into dry ingredients and stir until just combined; small lumps are okay.

    Heat a griddle or skillet over medium heat and lightly grease with butter.

    Pour batter onto griddle and cook until bubbles form on top (about 2 minutes), then flip and cook another 1-2 minutes until golden.

    Toss sliced strawberries with 1 tablespoon sugar and let sit 5 minutes.
