Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1¾ cups buttermilk
  • 3 tablespoons melted butter
  • 1 pound fresh strawberries, sliced
  • 2 tablespoons sugar for berries
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

    Mix flour, sugar, baking powder, and salt in a large bowl.

    Whisk together eggs, buttermilk, and melted butter in another bowl.

    Combine wet and dry ingredients until just blended; do not overmix.

    Heat griddle or skillet over medium-high heat and lightly butter.

    Pour ¼ cup batter per pancake and cook until bubbles form on surface.

    Toss strawberries with 2 tablespoons sugar and let sit 10 minutes.
