Ingredients

  • 3 tablespoons Thai green curry paste
  • 500 grams chicken breast, cubed
  • 400 milliliters coconut milk
  • 200 milliliters chicken stock
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 100 grams green eggplant, quartered
  • 100 grams green beans
  • 3 fresh Thai basil leaves
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced

Instructions

    Heat oil in a large pan or wok over medium-high heat.

    Add minced garlic and cook for 30 seconds until fragrant.

    Add Thai green curry paste and stir-fry for 2 minutes, allowing the paste to release its oils.

    Pour in half the coconut milk and stir well to create a base.

    Add the cubed chicken and cook for 5-7 minutes until partially cooked through.

    Add the remaining coconut milk and chicken stock, bringing to a simmer.

    Add fish sauce and palm sugar, stirring to combine.

    Add green eggplant and green beans, simmering for 8-10 minutes until vegetables are tender.

    Taste and adjust seasoning with additional fish sauce or sugar as needed.

    Remove from heat and stir in fresh Thai basil.
