Thai Green Curry with Chicken

Ingredients

  • 600 g chicken breast, cut into bite-sized pieces
  • 3-4 tablespoons green curry paste
  • 400 ml coconut milk
  • 200 ml chicken stock
  • 2 Thai eggplants, quartered
  • 1 red bell pepper, sliced
  • 100 g green beans
  • 3-4 fresh Thai green chilies, sliced
  • 1 handful fresh basil leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 2 tablespoons vegetable oil
  • 3 kaffir lime leaves

Instructions

    Heat oil in a large pan or wok over medium-high heat.

    Add green curry paste and fry for 1-2 minutes until fragrant, stirring constantly.

    Pour in half the coconut milk and stir well to combine with the curry paste.

    Add chicken pieces and cook for 5-7 minutes until partially cooked, stirring occasionally.

    Add remaining coconut milk and chicken stock, then bring to a simmer.

    Add eggplants, bell pepper, and green beans. Simmer for 8-10 minutes until vegetables are tender.

    Stir in fish sauce, palm sugar, and kaffir lime leaves.

    Add fresh green chilies and cook for 2 more minutes.

    Remove from heat and stir in fresh basil leaves just before serving.

    Serve hot over jasmine rice with lime wedges.
