Ingredients

  • 2 tablespoons green curry paste
  • 500 grams chicken breast, cut into bite-sized pieces
  • 400 milliliters coconut milk
  • 200 grams Thai eggplants, halved
  • 2 cups fresh basil leaves
  • 3 tablespoons fish sauce
  • 2 tablespoons palm sugar
  • 2 tablespoons oil
  • 4 Thai bird's eye chilies
  • 200 milliliters chicken stock

Instructions

    Heat oil in a large pan or wok over medium-high heat.

    Add green curry paste and stir-fry for 2 minutes until fragrant.

    Add chicken pieces and cook for 5 minutes, stirring occasionally.

    Pour in coconut milk and chicken stock, stirring well to combine.

    Add eggplants, fish sauce, and palm sugar.

    Simmer for 10-12 minutes until chicken is cooked through and eggplants are tender.
