Thai Red Curry with Chicken

Ingredients

  • 600 g chicken breast, cut into bite-sized pieces
  • 3 tablespoons red curry paste
  • 400 ml coconut milk
  • 200 ml chicken stock
  • 2 red bell peppers, sliced
  • 150 g bamboo shoots
  • 100 g Thai basil leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 2 tablespoons vegetable oil
  • 3 kaffir lime leaves

Instructions

    Heat vegetable oil in a large wok or heavy-bottomed pan over medium-high heat.

    Add red curry paste and fry for 2-3 minutes until fragrant, stirring constantly.

    Pour in half of the coconut milk and stir well to combine with the curry paste.

    Add the chicken pieces and cook for 5-7 minutes until they begin to turn opaque.

    Add the remaining coconut milk and chicken stock, then bring to a simmer.

    Add sliced red bell peppers, bamboo shoots, and kaffir lime leaves.

    Season with fish sauce and palm sugar, stirring to combine.

    Simmer for 10-12 minutes until the chicken is cooked through and the sauce has thickened slightly.

    Stir in fresh Thai basil leaves just before serving.
