Thai Red Curry with Shrimp

Ingredients

  • 3 tablespoons red curry paste
  • 400 ml coconut milk
  • 500 g large shrimp, peeled
  • 150 g bamboo shoots
  • 2 red bell peppers, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • 2 tablespoons vegetable oil
  • handful fresh Thai basil

Instructions

    Heat vegetable oil in a large pan over medium-high heat.

    Add minced garlic and red curry paste, stirring constantly for 2 minutes until fragrant.

    Pour in coconut milk slowly, stirring to combine with the curry paste.

    Add fish sauce and brown sugar, mixing well.

    Bring the curry to a gentle simmer.

    Add the shrimp and cook for 3-4 minutes until they start to turn pink.

    Add bell peppers and bamboo shoots, cooking for another 4-5 minutes until shrimp are fully cooked.

    Finish with lime juice and tear in fresh Thai basil just before serving.

    Serve over jasmine rice.
