Ingredients
- 3 tablespoons red curry paste
- 400 ml coconut milk
- 500 g large shrimp, peeled
- 150 g bamboo shoots
- 2 red bell peppers, sliced
- 3 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 lime, juiced
- 2 tablespoons vegetable oil
- handful fresh Thai basil
Instructions

1Heat vegetable oil in a large pan over medium-high heat.

2Add minced garlic and red curry paste, stirring constantly for 2 minutes until fragrant.

3Pour in coconut milk slowly, stirring to combine with the curry paste.

4Add fish sauce and brown sugar, mixing well.

5Bring the curry to a gentle simmer.

6Add the shrimp and cook for 3-4 minutes until they start to turn pink.

7Add bell peppers and bamboo shoots, cooking for another 4-5 minutes until shrimp are fully cooked.

8Finish with lime juice and tear in fresh Thai basil just before serving.

9Serve over jasmine rice.
