Turkish Lamb and Eggplant Stew (Karnıyarık)

Ingredients

  • 4 large eggplants
  • 500g ground lamb
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 400g canned tomatoes
  • 3 tbsp tomato paste
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1/2 cup beef or vegetable broth
  • Fresh parsley for garnish

Instructions

    Slice eggplants in half lengthwise and scoop out the flesh, leaving a thin shell. Chop the scooped flesh finely.

    Heat olive oil in a large pan and fry eggplant shells until golden on both sides. Remove and set aside.

    In the same pan, cook ground lamb with chopped onions and garlic until browned.

    Add tomato paste, cumin, and red pepper flakes to the lamb mixture. Stir well and cook for 2 minutes.

    Mix in the chopped eggplant flesh and cook for 3-4 minutes.

    Fill each eggplant shell with the lamb mixture and arrange in a baking dish.

    Pour canned tomatoes and broth around the eggplants. Season with salt and pepper.

    Cover with foil and bake at 375°F (190°C) for 30-35 minutes until eggplants are very tender.

    Garnish with fresh parsley and serve hot.
