Turkish Lamb and Eggplant Stew (Karniyarik)

Ingredients

  • 4 large eggplants
  • 500 g ground lamb
  • 2 medium onions, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 400 ml canned tomatoes
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

    Slice eggplants lengthwise and scoop out flesh, leaving a 1 cm shell. Chop the scooped flesh and set aside.

    Heat 2 tbsp olive oil in a large pan and fry eggplant shells until lightly browned. Transfer to a baking dish.

    In the same pan, heat remaining oil and sauté diced onions until softened. Add minced garlic and cook for 1 minute.

    Add ground lamb and brown, breaking it up with a spoon, about 5-7 minutes.

    Stir in tomato paste, cumin, paprika, and red pepper flakes. Cook for 2 minutes.

    Add chopped eggplant flesh, canned tomatoes, salt, and pepper. Simmer for 10 minutes.

    Spoon the lamb mixture into the eggplant shells in the baking dish.

    Pour any remaining sauce around the eggplants.

    Bake at 180°C (350°F) for 35-40 minutes until eggplants are tender.

    Garnish with fresh parsley before serving.
