Vietnamese Beef Stew with Star Anise (Thịt Kho)

Ingredients

  • 800 grams beef chuck, cubed
  • 2 cups coconut water
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 4 star anise
  • 2 cinnamon sticks
  • 6 shallots, halved
  • 4 garlic cloves, crushed
  • 2 tablespoons vegetable oil
  • 1 teaspoon black pepper
  • 2 cups potatoes, cubed

Instructions

    Heat oil in a large pot over medium-high heat. Brown the beef cubes on all sides, about 8 minutes total. Remove and set aside.

    In the same pot, sauté shallots and garlic for 2 minutes until fragrant.

    Return beef to the pot. Add coconut water, fish sauce, sugar, star anise, cinnamon sticks, and black pepper.

    Bring to a boil, then reduce heat and simmer covered for 45 minutes until beef is tender.

    Add potatoes and continue simmering for 20 minutes until potatoes are cooked through.

    Adjust seasoning with fish sauce and sugar to taste. Serve hot over steamed jasmine rice.
