Ingredients
- 800g beef chuck, cut into 4cm cubes
- 3 star anise pods
- 1 cinnamon stick
- 2 stalks lemongrass, bruised
- 4 shallots, halved
- 5 garlic cloves, smashed
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 500ml beef stock
- 250ml coconut water or water
- 2 potatoes, quartered
- 1 tsp black pepper
- salt to taste
Instructions

1Heat oil in a large heavy-bottomed pot over medium-high heat.

2Brown the beef cubes in batches for 3-4 minutes per side until golden. Set aside.

3In the same pot, sauté shallots and garlic until fragrant, about 2 minutes.

4Return beef to the pot and add fish sauce and sugar, stirring well to coat.

5Add star anise, cinnamon stick, and lemongrass, stirring to combine.

6Pour in beef stock and coconut water, bringing to a boil.

7Reduce heat to low, cover, and simmer for 45 minutes until beef is tender.

8Add potatoes and simmer uncovered for 20 minutes until potatoes are cooked through.

9Season with black pepper and salt to taste.

10Serve hot over steamed jasmine rice.
