Vietnamese Braised Pork and Eggs (Thit Kho Trung)

Ingredients

  • 800 g pork shoulder, cubed
  • 6 eggs
  • 3 tbsp fish sauce
  • 2 tbsp sugar
  • 4 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 cup water
  • 1 tsp black pepper
  • 2 shallots, sliced
  • 1 tbsp soy sauce

Instructions

    Hard-boil 6 eggs, peel, and set aside.

    Heat oil in a large pot over medium-high heat. Add minced garlic and sliced shallots, sauté until fragrant.

    Add cubed pork and brown on all sides, about 5-7 minutes.

    In a small bowl, mix fish sauce, sugar, soy sauce, and black pepper. Pour over the pork.

    Stir well to coat the pork with the caramelized sauce, cooking for 2-3 minutes.

    Add water and bring to a boil, then reduce heat to low.

    Cover and simmer for 40 minutes until pork is very tender.

    Add the peeled eggs to the pot and simmer for another 10 minutes.

    Serve hot over steamed jasmine rice.
