Ingredients
- 800 g pork shoulder, cubed
- 6 eggs
- 3 tbsp fish sauce
- 2 tbsp sugar
- 4 cloves garlic, minced
- 2 tbsp vegetable oil
- 1 cup water
- 1 tsp black pepper
- 2 shallots, sliced
- 1 tbsp soy sauce
Instructions

1Hard-boil 6 eggs, peel, and set aside.

2Heat oil in a large pot over medium-high heat. Add minced garlic and sliced shallots, sauté until fragrant.

3Add cubed pork and brown on all sides, about 5-7 minutes.

4In a small bowl, mix fish sauce, sugar, soy sauce, and black pepper. Pour over the pork.

5Stir well to coat the pork with the caramelized sauce, cooking for 2-3 minutes.

6Add water and bring to a boil, then reduce heat to low.

7Cover and simmer for 40 minutes until pork is very tender.

8Add the peeled eggs to the pot and simmer for another 10 minutes.

9Serve hot over steamed jasmine rice.
