Vietnamese Caramelized Pork and Egg with Rice

Ingredients

  • 700 g pork shoulder, cut into chunks
  • 4 eggs
  • 3 tbsp sugar
  • 3 tbsp fish sauce
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 2 tsp black pepper
  • 1 cup water
  • 2 shallots, sliced
  • 2 tbsp soy sauce

Instructions

    Hard boil the eggs for 10 minutes, then peel and set aside.

    In a heavy pot, heat oil over medium-high heat and caramelize 2 tbsp sugar until golden, stirring constantly.

    Add minced garlic and cook for 30 seconds until fragrant.

    Add pork chunks and brown on all sides, about 5 minutes.

    Add remaining 1 tbsp sugar, fish sauce, soy sauce, black pepper, and water.

    Bring to a boil, then reduce heat to low and simmer covered for 30 minutes, stirring occasionally.

    Add peeled eggs and sliced shallots, simmer for another 10 minutes until pork is tender.

    Adjust seasoning to taste and serve hot over steamed jasmine rice with pickled vegetables on the side.
