Vietnamese Grilled Chicken Salad

Ingredients

  • 300g chicken breast
  • 100g mixed salad greens
  • 100g cherry tomatoes
  • 1 cucumber
  • 50g fresh mint leaves
  • 50g fresh cilantro
  • 2 limes
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 red chili
  • 1 clove garlic
  • 2 tbsp vegetable oil
  • 50g roasted peanuts
  • to taste salt and pepper

Instructions

    Pat dry the chicken breast and season with salt, pepper, and a light drizzle of oil.

    Heat a grill pan or outdoor grill to medium-high heat and cook the chicken for 6-7 minutes per side until cooked through and lightly charred.

    Let the chicken rest for 5 minutes, then slice into strips.

    For the dressing, squeeze lime juice into a bowl, add minced garlic, chopped red chili, fish sauce, and sugar. Whisk together until combined.

    Arrange mixed greens, cucumber slices, halved cherry tomatoes on a plate.

    Top with sliced chicken and scatter fresh mint and cilantro leaves.

    Drizzle generously with the lime-fish sauce dressing.

    Garnish with crushed roasted peanuts and serve immediately.
