Ingredients
- 8 rice paper sheets
- 200g shrimp or tofu, cooked
- 2 cups fresh lettuce
- 1 cup fresh mint leaves
- 1 cup fresh cilantro
- 2 carrots, julienned
- 1 cucumber, julienned
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 1 garlic clove, minced
- 1 red chili, minced
Instructions

1Mix fish sauce, lime juice, sugar, garlic, and chili in a bowl to create the dipping sauce.

2Soak rice paper sheets in warm water for 30 seconds until pliable.

3Layer lettuce, mint, cilantro, carrots, cucumber, and protein on each rice paper.

4Roll tightly, tucking in the sides as you go.
