Ingredients

  • 8 rice paper sheets
  • 200g shrimp or tofu, cooked
  • 2 cups fresh lettuce
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
  • 2 carrots, julienned
  • 1 cucumber, julienned
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • 1 garlic clove, minced
  • 1 red chili, minced

Instructions

    Mix fish sauce, lime juice, sugar, garlic, and chili in a bowl to create the dipping sauce.

    Soak rice paper sheets in warm water for 30 seconds until pliable.

    Layer lettuce, mint, cilantro, carrots, cucumber, and protein on each rice paper.

    Roll tightly, tucking in the sides as you go.

    Serve immediately with the dipping sauce on the side.
