Ingredients

  • 200g cooked shrimp, halved lengthwise
  • 2 cups mixed fresh herbs (mint, cilantro, basil)
  • 2 lettuce leaves, torn
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • 1 red chili, thinly sliced
  • 2 cloves garlic, minced

Instructions

    Make the dressing by whisking together fish sauce, lime juice, sugar, garlic, and sliced chili until the sugar dissolves completely.

    Arrange lettuce leaves as the base on two plates.

    Top with julienned carrots and cucumber in neat piles.

    Arrange shrimp halves on top of the vegetables.

    Scatter fresh herbs (mint, cilantro, and basil) generously over the salad.

    Drizzle the lime-fish sauce dressing over everything just before serving.

    Toss gently if desired, or serve as a composed salad for presentation.
