Ingredients
- 12 rice paper wrappers
- 200g fresh lettuce leaves
- 150g cooked shrimp or tofu
- 100g fresh mint leaves
- 100g fresh cilantro
- 100g julienned carrots
- 100g julienned cucumber
- 100g cooked rice vermicelli
- 3 tbsp peanut butter
- 2 tbsp hoisin sauce
- 1 tbsp lime juice
- 1 clove minced garlic
- 1 tbsp water
Instructions

1Prepare the peanut sauce by mixing peanut butter, hoisin sauce, lime juice, minced garlic, and water until smooth.

2Fill a shallow bowl with warm water. Dip each rice paper wrapper into the water for 3-4 seconds until pliable.

3Place a damp wrapper on a clean surface. Layer lettuce, herbs, vegetables, protein, and rice vermicelli in the center.

4Fold the sides of the wrapper inward, then roll tightly from bottom to top into a cylinder.

5Place rolls seam-side down on a serving plate. Serve with peanut sauce for dipping.
