Vietnamese Summer Rolls with Peanut Sauce

Ingredients

  • 12 rice paper wrappers
  • 200g fresh lettuce leaves
  • 150g cooked shrimp or tofu
  • 100g fresh mint leaves
  • 100g fresh cilantro
  • 100g julienned carrots
  • 100g julienned cucumber
  • 100g cooked rice vermicelli
  • 3 tbsp peanut butter
  • 2 tbsp hoisin sauce
  • 1 tbsp lime juice
  • 1 clove minced garlic
  • 1 tbsp water

Instructions

    Prepare the peanut sauce by mixing peanut butter, hoisin sauce, lime juice, minced garlic, and water until smooth.

    Fill a shallow bowl with warm water. Dip each rice paper wrapper into the water for 3-4 seconds until pliable.

    Place a damp wrapper on a clean surface. Layer lettuce, herbs, vegetables, protein, and rice vermicelli in the center.

    Fold the sides of the wrapper inward, then roll tightly from bottom to top into a cylinder.

    Place rolls seam-side down on a serving plate. Serve with peanut sauce for dipping.
