Yakitori Donburi with Grilled Chicken

Ingredients

  • 800g boneless chicken thighs, cut into bite-sized pieces
  • 4 cups cooked steamed rice
  • 4 scallions, cut into 2-inch lengths
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1 tbsp sake
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • wooden skewers soaked in water
  • to taste shichimi togarashi (seven spice)

Instructions

    Soak wooden skewers in water for 30 minutes to prevent burning.

    In a small saucepan, combine soy sauce, mirin, sugar, sake, garlic, and ginger. Simmer over medium heat for 5 minutes until slightly thickened. This is your tare sauce.

    Thread chicken pieces and scallion pieces alternately onto the skewers.

    Heat a grill or grill pan to high heat. Grill the skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and charred at the edges.

    Brush the tare sauce generously over the skewers during the last 2 minutes of grilling, coating them evenly.

    Divide steamed rice among four bowls. Top each bowl with 2-3 yakitori skewers.

    Drizzle any remaining sauce over the rice and chicken.

    Sprinkle with shichimi togarashi to taste and serve immediately.
