Ingredients
- 800g boneless chicken thighs, cut into bite-sized pieces
- 4 cups cooked steamed rice
- 4 scallions, cut into 2-inch lengths
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tbsp sugar
- 1 tbsp sake
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- wooden skewers soaked in water
- to taste shichimi togarashi (seven spice)
Instructions

1Soak wooden skewers in water for 30 minutes to prevent burning.

2In a small saucepan, combine soy sauce, mirin, sugar, sake, garlic, and ginger. Simmer over medium heat for 5 minutes until slightly thickened. This is your tare sauce.

3Thread chicken pieces and scallion pieces alternately onto the skewers.

4Heat a grill or grill pan to high heat. Grill the skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and charred at the edges.

5Brush the tare sauce generously over the skewers during the last 2 minutes of grilling, coating them evenly.

6Divide steamed rice among four bowls. Top each bowl with 2-3 yakitori skewers.

7Drizzle any remaining sauce over the rice and chicken.

8Sprinkle with shichimi togarashi to taste and serve immediately.
