Ingredients

  • 500g chicken thighs, cut into bite-sized pieces
  • 4 wooden skewers, soaked in water
  • 100ml soy sauce
  • 50ml mirin
  • 2 tablespoons sugar
  • 1 tablespoon sake
  • 2 cloves garlic, minced
  • 300g Japanese short-grain rice
  • 2 eggs
  • 3 green onions, chopped
  • 1 tablespoon sesame seeds
  • 1 teaspoon cornstarch mixed with water

Instructions

    Cook the rice according to package instructions and keep warm.

    In a small saucepan, combine soy sauce, mirin, sugar, sake, and minced garlic. Bring to a simmer over medium heat.

    Stir in cornstarch slurry to thicken the tare sauce slightly. Remove from heat and set aside.

    Thread chicken pieces onto soaked wooden skewers, dividing evenly.

    Heat a grill or grill pan to high heat. Grill skewers for 3-4 minutes per side until cooked through, then brush generously with tare sauce on all sides.

    Continue grilling for 1-2 minutes until the glaze caramelizes.

    Meanwhile, bring a pot of water to a boil and gently add eggs. Boil for 6-7 minutes for soft-boiled eggs, then cool in ice water and peel.

    Divide warm rice between two bowls. Top each with glazed yakitori skewers and a halved soft-boiled egg.

    Garnish with green onions and sesame seeds, then drizzle with any remaining tare sauce.
