Ingredients
- 500g chicken thighs, cut into bite-sized pieces
- 4 wooden skewers, soaked in water
- 100ml soy sauce
- 50ml mirin
- 2 tablespoons sugar
- 1 tablespoon sake
- 2 cloves garlic, minced
- 300g Japanese short-grain rice
- 2 eggs
- 3 green onions, chopped
- 1 tablespoon sesame seeds
- 1 teaspoon cornstarch mixed with water
Instructions

1Cook the rice according to package instructions and keep warm.

2In a small saucepan, combine soy sauce, mirin, sugar, sake, and minced garlic. Bring to a simmer over medium heat.

3Stir in cornstarch slurry to thicken the tare sauce slightly. Remove from heat and set aside.

4Thread chicken pieces onto soaked wooden skewers, dividing evenly.

5Heat a grill or grill pan to high heat. Grill skewers for 3-4 minutes per side until cooked through, then brush generously with tare sauce on all sides.

6Continue grilling for 1-2 minutes until the glaze caramelizes.

7Meanwhile, bring a pot of water to a boil and gently add eggs. Boil for 6-7 minutes for soft-boiled eggs, then cool in ice water and peel.

8Divide warm rice between two bowls. Top each with glazed yakitori skewers and a halved soft-boiled egg.

9Garnish with green onions and sesame seeds, then drizzle with any remaining tare sauce.
