Ingredients

  • 500g all-purpose flour
  • 300ml warm water
  • 7g instant yeast
  • 5ml salt
  • 15ml olive oil
  • 60ml zaatar spice mixture
  • 60ml extra virgin olive oil for topping
  • 200g labneh (strained yogurt)
  • fresh tomatoes sliced
  • fresh cucumber sliced
  • 100g olives

Instructions

    Mix warm water, yeast, and sugar. Let stand 5 minutes until foamy.

    In a large bowl, combine flour and salt. Pour yeast mixture and olive oil into flour.

    Knead dough for 8-10 minutes until smooth and elastic. Cover and let rise for 1 hour.

    Divide dough into 4 equal pieces. Roll each into a thin oval (about 3mm thick).

    Mix zaatar with olive oil to create a paste.

    Spread zaatar mixture evenly over each flatbread.

    Heat a griddle or large skillet over medium-high heat.

    Cook each manakish for 3-4 minutes per side until golden and slightly crispy.

    Serve hot with labneh, fresh vegetables, olives, and additional olive oil for dipping.
