Ingredients
- 500g all-purpose flour
- 300ml warm water
- 7g instant yeast
- 5ml salt
- 15ml olive oil
- 60ml zaatar spice mixture
- 60ml extra virgin olive oil for topping
- 200g labneh (strained yogurt)
- fresh tomatoes sliced
- fresh cucumber sliced
- 100g olives
Instructions

1Mix warm water, yeast, and sugar. Let stand 5 minutes until foamy.

2In a large bowl, combine flour and salt. Pour yeast mixture and olive oil into flour.

3Knead dough for 8-10 minutes until smooth and elastic. Cover and let rise for 1 hour.

4Divide dough into 4 equal pieces. Roll each into a thin oval (about 3mm thick).

5Mix zaatar with olive oil to create a paste.

6Spread zaatar mixture evenly over each flatbread.

7Heat a griddle or large skillet over medium-high heat.

8Cook each manakish for 3-4 minutes per side until golden and slightly crispy.

9Serve hot with labneh, fresh vegetables, olives, and additional olive oil for dipping.
